Ed and the EGG

Fifty years ago, when Big Green Egg founder Ed Fisher started selling kamado-style charcoal ovens at his shop in Atlanta, Georgia, he tried to lure customers in by cooking chicken wings out on the street. They smelt and tasted so good that within minutes he’d sold his first barbecue. He recalls: “At that moment I thought, wow, I could be onto something here. But I never thought the concept would develop to become so huge.”

As part of Big Green Egg’s 50th birthday celebrations, we’re sharing 50 recipes from an amazing cast of cooks. This week it’s the turn of the man (and the recipe) that started it all. Since 1974, the EGG has grown massively in the quality of its ceramics and the sophistication of its design, but the allure of smoky, spicy chicken wings remains unchanged.

A CHAT WITH ED

Time to hear from the man himself! In this insightful interview, the legendary founder of Big Green Egg shares his thoughts on the inspiration behind his invention, his obsession with finding the perfect ceramics, and what the next 50 years might hold.

Increase your wingspan!

With chicken wings this moreish, the biggest challenge is making enough. For maximum output, Ed’s recipe makes use of the EGGspander System, which significantly increases the EGG’s cooking area. Available for our Large and XL models, it also enables the simultaneous use of multiple cooking modes.
