As part of Big Green Egg’s 50th birthday celebrations, we’re sharing 50 brand-new recipes from an amazing cast of cooks. Next up are two fantastic chefs and close friends: Mark Kempson and Joshua Hunter. Mark runs the Michelin-starred Kitchen W8, while Joshua heads up the fine dining restaurant at the Holland & Holland shooting ground.
Both men are passionate about cooking and eating game. For their contribution to our series, they stalked and shot a muntjac deer, butchered it, and used it to create two stunning dishes on the EGG. Joshua, a long-time EGG user, says: “There’s just something beautiful about it, cooking over pure lumpwood charcoal.” For Mark, this was the first encounter with that famous green Dome. “I’m very impressed,” he concludes.

Mark and Joshua cooked their dishes at the historic Holland & Holland shooting ground in north London, home to Joshua’s restaurant. On 27th November, we’re teaming up with Holland & Holland to offer a unique pre-Christmas experience. Enjoy a clay shoot in the morning, then pick up tips and techniques from our experts as they cook a full Christmas dinner on the EGG. Tickets include breakfast, drinks and a turkey feast.

About Mark and Joshua
After earning his spurs at Phil Howard’s The Square, Mark Kempson has been head chef at Kitchen W8 in Kensington since it opened in 2009 and has held a Michelin star there since 2011. Famed for his approach to game, Mark is an ambassador for Eat Wild, a development board that promotes the benefits of eating wild meats. Joshua Hunter worked with Mark at Kitchen W8 for two years before arriving at Holland & Holland in 2019 to head up his own restaurant.
