The Big Green Egg Christmas Box provides the high-quality ingredients you need to do justice to two free fantastic Christmas recipes from chef Tom Booton: Rib of Beef with Mustard, Onion Marmalade and Bone Marrow Gravy, and Gammon with Mulled Wine Glaze, prepared in the infamous kitchen of The Grill at The Dorchester. All the extras in the box are on us.
WHAT'S IN THE BOX?
2.5kg boneless unsmoked gammon
4kg dry-aged three-bone rib of beef
2 x HG Walter bone marrow troughs (250g each)
Free 280ml mulled wine glaze, made by Tom Booton at The Grill at The Dorchester
Free 1 litre HG Walter beef stock
Free 140g Tracklements strong English mustard
Free 345g Tracklements caramelised onion marmalade
Cooking the whole box at once? Serves 10. £18 per head.
As well as providing us with the recipes, Tom and his team at the Dorchester are making the mulled wine glaze included in the box. The beef, pork, bone marrow and stock come from HG Walter, an independent family-run butcher in London famed for the quality of its produce. The mustard and onion marmalade are made in Wiltshire in small batches by Tracklements, an award-winning producer of classic English condiments. All you need to add is some seasonal veg.

Since taking over the pass at The Grill at The Dorchester, becoming the youngest head chef in its near 100-year history, Tom has been bringing fresh energy and ideas to the restaurant’s classic European repertoire, including the use of Big Green Eggs in his kitchen.

HG Walter, QUALITY MEAT comes first
The meat in the Christmas box, sourced by HG Walter, is of the quality you’d expect of the chef at The Dorchester. The grass-fed beef comes from Aberdeen Angus and Hereford cattle, which roam on the verdant pastures of Ayrshire, Scotland or County Wexford, Ireland, and is aged for 28 days in the cool, salty air of HG Walter’s Himalayan salt chamber. The gammon comes from free-range pigs that are slowly reared on a natural diet on a Sussex farm overlooking the South Downs.

Our friends at Swig – a specialist online wine retailer with a passion for seeking out undiscovered wines that punch above their weight – have come up with three wines that will pair perfectly with Tom’s recipes: an English sparkling that has beaten Dom Perignon and Krug in a blind tasting and is 'Best Sparkling of the Year' 2023, a gorgeous white Burgundy, and a Super-Tuscan red from next to Sassicaia in Bolgheri that is outstanding with beef.
