Katy and the EGG
The appeal of a Big Green Egg goes far beyond food. It’s about quality time spent outdoors, enveloped by the natural world. In the buildup to RHS Chelsea Flower Show (20 – 24 May), three of the country’s leading garden designers have spoken to us about their craft, offering tips on creating an outdoor kitchen and sharing their favourite fire-cooking recipes.
First up is Katy Terry, founder of Good Grounding Garden Design. “I would eat outside every day if I could,” she says. “Even if it’s not quite the right weather for it, I want to see nature and hear the birds – even that experience changes the mood.”
A CHAT WITH Katy
Katy took time out from prepping for this year’s RHS Chelsea Flower Show to chat to us about her approach to design, her love of alfresco cooking, and how her garden at the show was heavily informed by a recent ADHD diagnosis.

Katy’s Beetroot, Goat’s Cheese and Pistachio Salad with Lemon Dressing
With such a busy buildup to Chelsea, Katy has chosen to grow lots of beetroot in her garden this year – a highly forgiving crop that doesn’t demand too much care and attention. It’s also fabulous when roasted in a Big Green Egg, perfect for bringing out its earthy sweetness. Katy has shared with us this beautiful recipe for a roasted beet salad with crumbled goat’s cheese and some of the herbs she grows in her herb garden.

Her garden is part celebration of human diversity, part calming escape from an intense world. “I decided it would be wonderful to create a scheme around plants that don’t do the things we expect them to do," she explains.
