There’s a wild beauty to the landscapes of Scotland. Rugged coastlines, craggy mountains, shimmering lochs, rolling hills in every conceivable shade of green. And surely the best way to enjoy it is to light up an EGG in the open air and cook some of the extraordinary ingredients produced by these unique environments. Shellfish, wild venison, smoked haddock, oats, roots, sea vegetables, all elevated by fire and smoke.
For recipe inspiration, we turned to William Rhys Hamer of The Wilder Kitchen, a fire-cooking expert whose work is rooted in the wilderness of Scotland. He made his way to Glen Dye, a retreat on the banks of the River Dye at the end of the Cairn o’ Mount mountain pass, watched over by the massive granite tor of Clachnaben – the ideal setting for savouring the very best local ingredients.

FEASTING ON THE LOCH
Located on the shores of Loch Fyne, Kabn is a peaceful, off-grid retreat in the heart of the Scottish Highlands. Feasting in the Highlands
The Highland Scramble, run by a set of friends obsessed with motorbikes and the beauty of northern Scotland, takes small groups of riders on treks around the Highlands, taking in some of the UK’s most staggering scenery along the way, from mirror-like mountain lakes to deserted beaches. A battery of Big Green Eggs follows the bikers on their tour, stopping each night at characterful accommodation to cook up communal feasts.
